Grape variety/vinification
Garganega, Trebbianello, Trebbiano and Bianca Fernanda grapes grow on small hills with limestone in the soil, south of Lake Garda. The grapes are picked by hand and put into wooden crates. This is usually done early in the morning or late in the evening to prevent them from being damaged by the heat of the day. Grapes picked in the cooler hours remain whole and do not ferment during transport.
When the grapes arrive at the winery, they are pressed immediately. The juice is fermented at a controlled temperature in stainless steel tanks (20°-23°C). The grape skins often stay in the tank for a long time with other natural substances, to release more aromas. After fermentation, the wine is stabilised and bottled.
Tasting note
This wine has a light straw yellow colour with slight greenish tones. The bouquet is delicate, fresh and elegantly fruity. The taste is softly mineral and slightly juicy. The specific location and altitude of the vineyard give the wine a delicate minerality, an important structure and typical floral scents.
Wine/food
This wine goes perfectly with grilled sea bass, fried plaice fillet, light salads with goat cheese and honey, carpaccio of scallops, risotto with asparagus and Parmesan, and young Brie or mild goat cheese.
