Aerstone 10 years Sea Cask
Carefully matured for 10 years in the intense environment that surrounds the Ailsa Bay distillery in the Scottish lowlands.
For Aerstone two distinctive styles of whisky have been produced, one called Land Cask, which is rich and smoky, and one called Sea Cask, which is smooth and easy.
This is Sea Cask.
A smooth tasting whisky with an air of sea salt on the finish.
Ailsa Bay Distillery
Ailsa Bay Distillery, located in Girvan on the south-west coast of Scotland, is part of the Lowlands region. Founded in 2007 by William Grant & Sons, the distillery was built to meet the growing demand for single malt whisky and to increase the company's production capacity. Taking its name from the nearby granite island, Ailsa Craig, in the Firth of Clyde.
The distillery combines traditional and modern distillation techniques. It has eight copper pot stills and uses "micro-maturation" processes, in which the spirit first matures in smaller casks before being transferred to traditional oak casks. This process accelerates maturation and gives a complex flavour profile. In addition, Ailsa Bay is known for its precise control of phenol and sweetness levels, uniquely listed as PPM and SPPM on the bottles, giving aficionados insight into the flavour profile of each whisky.
