Guyana 23 years 1999 - 2023 #WP99545 The Wild Parrot

This 'Wild Parrot' initially lay maturing in Guyana's tropical climate. This took place from 1999 to 2002. After this, the cask was shipped and for the remaining years it underwent continental aging in the climate of the UK. The palette of flavours and aromas elegantly alternates between empirical, exotic and vegetal ranges and successfully retains the freshness it acquired in the prime of its youth. Maturing in bourbon barrels, the wine has simultaneously developed a ripe expression subtly intertwined with floral, vanilla and liquorice notes.

Colour

Golden yellow

Nose

Rich, well-developed. Tropical (pineapple, banana), fibrous (sugar cane) and spicy (ginger, clove), the initial nose is also medicinal (ointment) and camphor-like. If you let the scent breathe, aromas of beeswax and white flowers (lily of the valley, lily) appear alongside notes of rubber and vetiver.

Taste

Lively but soft. At the onset, citrus zest (lime, grapefruit), grated ginger and fresh cane sugar penetrate deeply into the taste buds. The vegetal middle palette immerses us in the harvest period of sugar cane. Perfumed cane flowers fill the air.

Overall

Long, balanced. Behind a very pleasant saltiness, the finish first shows glimpses of delicate vanilla, spice and exotic (pineapple, kaffir lime) flavours. The creamy finish returns to liquorice and bitter notes (cinchona, gentian).
